Directions
- *if using self-rising flour Omit baking powder and Salt.
- This cake first became popular in the 1920s and was also known as Spider, .
- Heat oven to 350 degrees.
- Heat margarine in 10-inch ovenproof skillet or square pan, 9 X 9 X 2 inches, in oven until melted.
- Sprinkle brown sugar over margarine.
- Arrange apricot halves and prunes in skillet.
- Beat remaining ingredients on low speed 30 seconds, scraping bowl constantl Beat on high speed 3 minutes, scraping bowl occasionally.
- Pour over fruit in skillet.
- Bake skillet 45 to 50 minutes, square 50 to 55 minutes or until wooden pick inserted in center comes out clean.
- Immediately invert onto heatproof plate.
- Let skillet remain over cake a few minutes.
- Serve warm and, if desired, with Sweetened Whipped Cream.
